Guilt-Free Oatmeal Cookies (No Flour, No White Sugar!)

These cookies are naturally sweetened, flourless, and full of wholesome ingredients like oats, dried fruits, and nuts. They’re soft, chewy, and perfect for a quick breakfast, snack, or even a healthy dessert.

Ingredients:

  • 1 cup rolled oats (90g)
  • 2 tablespoons melted butter (30g)
  • 1 large egg
  • 1/4 cup chopped walnuts (30g)
  • 1/4 cup chopped dates (about 35g)
  • 50g dried cranberries
  • Zest of 1 lemon (organic preferred)
  • Optional: 1/2 tsp cinnamon or a dash of vanilla extract for extra flavor

Instructions:

  1. Preheat your oven:
    Set it to 350°F (175°C) and line a baking tray with parchment paper.
  2. Mix dry ingredients:
    In a large bowl, combine oats, cranberries, walnuts, dates, lemon zest, and cinnamon (if using). Stir well.
  3. Prepare wet mixture:
    In a separate bowl, beat the egg and mix it with the melted butter and vanilla (if using).
  4. Combine:
    Pour the wet ingredients into the dry and stir until everything is evenly coated. The mixture will be sticky and chunky.
  5. Shape the cookies:
    Use a spoon to scoop small portions (about 1.5 tbsp each) and shape them into cookies with your hands. Place them on the prepared tray, leaving a little space in between.
  6. Bake:
    Bake for 12–15 minutes or until the edges are golden brown and the tops are set. Avoid overbaking—they should stay soft inside.
  7. Cool & enjoy:
    Let them cool on the tray for 5 minutes, then transfer to a wire rack. Store in an airtight container at room temperature for up to 4 days or refrigerate for longer freshness.
