Descripción:
Este plato rústico y sabroso combina papas tiernas, ejotes crujientes, tocino dorado y un toque de aliño ranchero con mantequilla y ajo. Perfecto como acompañamiento reconfortante o como plato principal ligero, tiene una textura cremosa, crujiente y llena de sabor casero.

🧾 Ingredientes:

  • 1 libra (450 g) de ejotes (green beans) frescos, lavados y sin extremos
  • 1½ libras (680 g) de papas baby rojas o Yukon gold, cortadas a la mitad o en cuartos según el tamaño
  • 6 tiras de tocino, cocidas crujientes y desmenuzadas
  • 1 sobre (1 oz / 28 g) de mezcla de condimento tipo ranch (ranch seasoning mix)
  • 3 cucharadas (45 g) de mantequilla sin sal, derretida
  • 2 dientes de ajo, finamente picados o prensados
  • Sal y pimienta al gusto

🍳 Utensilios necesarios:

  • Sartén grande
  • Cacerola para hervir
  • Tazón grande
  • Fuente para hornear o bandeja
  • Papel aluminio (opcional)
  • Cuchillo y tabla para cortar
  • Colador

👩‍🍳 Instrucciones paso a paso:

1. Preparar las papas:

  • Coloca las papas baby en una cacerola grande con agua fría y una pizca de sal.
  • Lleva a ebullición y cocina por 10-12 minutos, hasta que estén apenas tiernas al pinchar con un tenedor. No sobrecocer.
  • Escurre y reserva.

2. Cocinar los ejotes:

  • Mientras tanto, hierve agua en otra cacerola o en la misma ya vacía. Agrega los ejotes y cocina por 3-4 minutos.
  • Escurre y pasa inmediatamente a un tazón con agua helada (baño de hielo) para detener la cocción y conservar el color verde brillante. Escurre bien.

3. Cocinar el tocino:

  • En una sartén grande, cocina las tiras de tocino a fuego medio hasta que estén doradas y crujientes.
  • Transfiere a un plato con papel absorbente y desmenuza en pedacitos. Reserva 1 cucharada de la grasa del tocino.

4. Mezclar todos los ingredientes:

  • En un tazón grande, mezcla las papas cocidas, los ejotes escurridos, el ajo picado y el condimento ranch.
  • Añade la mantequilla derretida y la cucharada de grasa de tocino reservada.
  • Mezcla suavemente para que todos los ingredientes se impregnen del aderezo.
  • Agrega sal y pimienta al gusto (ten en cuenta que el condimento ranch y el tocino ya aportan sal).

5. Hornear:

  • Precalienta el horno a 200°C (400°F).
  • Pasa la mezcla a una fuente para hornear ligeramente engrasada.
  • Espolvorea encima el tocino crujiente desmenuzado.
  • Hornea durante 15-20 minutos, hasta que las papas estén doradas y los ejotes ligeramente crujientes.
  • Opcional: cubre con papel aluminio durante los primeros 10 minutos para que se mantenga jugoso.

💡 Notas y tips:

  • Puedes añadir queso cheddar rallado por encima en los últimos 5 minutos de horneado para un toque cremoso.
  • Para una versión más ligera, reduce la cantidad de mantequilla y usa solo el condimento ranch sin grasa añadida.
  • Queda excelente como guarnición para carnes asadas, pollo al horno o incluso como plato principal vegetariano (sin tocino).
  • Se conserva bien en refrigeración hasta 3 días y se puede recalentar al horno o sartén.
