Ingredientes (4 porciones)
4 elotes desgranados (o 2 tazas de granos de elote)
1 cucharada de mantequilla
½ cebolla picada
2 dientes de ajo picados
1 chile poblano (opcional, para más sabor)
3 tazas de caldo de pollo o vegetal
1 taza de leche o media crema
1 cucharada de harina (para espesar, opcional)
Sal y pimienta al gusto
Queso panela o queso fresco para servir
Tiras de tortilla o crutones (opcional)
Preparación
1. Sofríe la base
En una olla, derrite la mantequilla y saltea la cebolla y el ajo hasta que se vean transparentes.
Si usarás chile poblano, agrégalo aquí en tiritas o picado.
2. Agrega el elote
Añade los granos de elote y cocina 3–5 minutos para que suelten aroma.
3. Licúa
Agrega el caldo, cocina 5 minutos y luego pasa la mitad de la mezcla a la licuadora.
Licúa muy bien y regresa a la olla (esto deja textura, pero también cremosidad).
Si prefieres una sopa totalmente lisa, licúa todo y cuela.
4. Hazla cremosa
Agrega la leche o media crema.
Si quieres espesar, disuelve la cucharada de harina en un poco de leche fría y agrégala moviendo.
5. Sazona
Deja hervir 5–8 minutos a fuego bajo. Ajusta sal y pimienta.
