A nutritious and flavorful one-pan dinner that’s ready in under 30 minutes! This baked salmon in foil locks in moisture and flavor while roasting with crisp-tender asparagus and bright lemon-garlic seasoning. Perfect for busy weeknights or a light, satisfying meal.

🧾 Ingredients:

  • 4 salmon fillets (6 oz each), skin-on preferred
  • 1 lb asparagus spears, trimmed
  • 2 tbsp olive oil
  • 1 lemon, sliced into thin rounds
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional fresh herbs: dill, parsley, or paprika to enhance flavor

🔪 Instructions:

1. Preheat the oven

  • Set your oven to 400°F (200°C) and line a baking sheet with aluminum foil.

2. Prepare the foil packets

  • Cut 4 large sheets of foil.
  • Place a handful of trimmed asparagus in the center of each foil sheet.
  • Drizzle with olive oil and season lightly with salt and pepper.

3. Season the salmon

  • Place a salmon fillet on top of the asparagus in each packet.
  • Sprinkle with garlic, a pinch of salt and pepper, and a few slices of lemon.
  • Add herbs if using—dill pairs especially well with salmon.

4. Wrap and bake

  • Fold the foil over the salmon and asparagus, sealing all edges to make a tight foil packet.
  • Place the packets on the baking sheet and bake for 18–20 minutes, or until the salmon flakes easily with a fork.

5. Serve hot

  • Carefully open the packets to release steam.
  • Serve directly in the foil for easy cleanup, or plate with a sprinkle of fresh herbs and an extra squeeze of lemon juice.
