Ingredientes para preparar Solomillo de Ternera en Salsa de Queso
800 g de solomillo de ternera en medallones (aprox. 4 unidades de 200 g)
15 ml de aceite de oliva virgen extra (1 cucharada)
20 g de mantequilla (1 1/2 cucharadas)
1 chalota mediana picada, 60 g (1 unidad)
1 diente de ajo (1 unidad)
60 ml de vino blanco seco (1/4 de taza)
100 ml de caldo de carne (aprox. 1/2 taza menos 1 cucharada)
250 ml de nata para cocinar (1 taza)
120 g de queso azul desmenuzado (aprox. 3/4 de taza)
5 g de maicena, opcional (1 cucharadita)
5 g de perejil fresco picado (2 cucharadas)
1/4 de cucharadita de nuez moscada (una pizca)
Sal fina al gusto
Pimienta negra recién molida al gusto
Cómo preparar Solomillo de Ternera en Salsa de Queso
Jugoso solomillo de ternera cubierto por una sedosa salsa de queso azul que realza cada bocado con carácter y cremosidad. Un plato ideal para una cena especial que no exige horas de cocina: marcado rápido para sellar jugos, desglasado aromático y una salsa impecable que se prepara en la misma sartén. El contraste entre la carne tierna y la intensidad del queso crea un equilibrio delicioso, redondeado con un toque de vino blanco y hierbas frescas. Sirve con un puré suave o verduras salteadas y tendrás un resultado digno de restaurante, listo en pocos minutos.
1. Saca el solomillo de la nevera 20 minutos antes para atemperarlo. Sécalo bien con papel de cocina; este paso ayuda a conseguir una corteza dorada.
2. Salpimienta la carne justo antes de cocinarla. Calienta una sartén amplia y pesada a fuego alto con el aceite. Cuando humee ligeramente, marca los medallones 2–3 minutos por lado para punto medio. No los muevas para lograr buen sellado.
3. Añade la mantequilla al final del sellado y, con una cuchara, báñalos 30 segundos. Retira la carne a un plato caliente y deja reposar 5–7 minutos; así los jugos se redistribuyen.
4. Baja el fuego a medio. En la misma sartén, sofríe la chalota 2 minutos y el ajo 30 segundos, rascando el fondo para despegar los jugos caramelizados.
5. Desglasa con el vino blanco y deja reducir 1–2 minutos hasta que casi se evapore el alcohol. Incorpora el caldo, hierve 2 minutos para concentrar sabor.
6. Agrega la nata y la nuez moscada. Cocina a fuego medio-bajo 3–4 minutos hasta que espese ligeramente. Si prefieres más cuerpo, disuelve la maicena en 1 cucharada de agua fría y añádela, removiendo hasta ligar.
7. Incorpora el queso azul y remueve suave hasta fundir sin que hierva fuerte (evita que se corte). Ajusta de sal y pimienta. Si deseas textura fina, cuela la salsa y vuelve a la sartén.
