Ingredientes para preparar Cocido Montañés
500 g alubia blanca seca (2,5 tazas)
500 g berza o col rizada (1/2 unidad mediana)
300 g costilla de cerdo adobada (4–6 piezas)
200 g panceta curada (1 trozo)
2 chorizos de guisar (2 unidades, ~200 g)
2 morcillas de cebolla (2 unidades, ~200 g)
1 hueso de jamón, opcional (1 unidad)
1 cebolla grande (1 unidad, ~200 g)
4 dientes de ajo (4 unidades)
30 ml aceite de oliva virgen extra (2 cucharadas)
10 g pimentón dulce (2 cucharaditas)
2 hojas de laurel (2 unidades)
12 g sal fina (2 cucharaditas), al gusto
1 g pimienta negra molida, opcional (1/4 cucharadita)
2 l agua fría (8 tazas)
Cómo preparar Cocido Montañés
El cocido montañés es pura cocina de cuchara del norte: contundente, perfumado y reconfortante. Un guiso de alubias y berza que abraza el humo de la costilla adobada, la melosidad de la panceta y el carácter del chorizo y la morcilla. Es de esos platos que calientan la casa y reúnen alrededor de la mesa. Con una cocción lenta y algún truco clásico —como “asustar” las alubias o añadir un sofrito de ajo y pimentón— se obtiene un caldo espeso y brillante, con legumbre entera y piel fina. Prepáralo con antelación: gana cuerpo y sabor al reposar. Perfecto para días fríos, pan al lado y buena compañía.
1. La víspera, lava las alubias y ponlas en remojo en abundante agua fría durante 12–16 horas. Escurre y enjuaga antes de cocinar para una piel más fina.
2. Lava la berza, retira los tallos gruesos y corta en tiras. Blanquéala 3 minutos en agua hirviendo con sal, enfría en agua helada y escurre; así perderá amargor y quedará más tierna.
3. Si las carnes están muy saladas, enjuágalas y escáldalas 2 minutos en agua hirviendo. Desecha esa agua. Esto evita un caldo excesivamente salado.
4. En una olla grande, coloca las alubias escurridas, 2 l de agua fría, laurel, la cebolla pelada entera, la panceta y el hueso de jamón. Lleva a ebullición suave y espuma las impurezas.
5. “Asusta” las alubias: cuando hierva, añade 100–150 ml de agua fría 2–3 veces, dejando que retome el hervor cada vez. Favorece una cocción homogénea y piel tierna.
6. Baja el fuego al mínimo y cocina semi tapado 60 minutos, sin remover con cuchara; mueve la olla en vaivén para no romper las alubias.
7. Añade la costilla y el chorizo. Cocina 30 minutos más a fuego suave. Pincha las morcillas y agrégalas en los últimos 20 minutos para evitar que se abran.
8. Prepara el sofrito: dora suavemente el ajo picado en el aceite. Retira del fuego, añade el pimentón, remueve y moja con un cucharón del caldo del guiso. Vierte el sofrito en la olla y menea.
9. Incorpora la berza blanqueada y cocina 15–20 minutos hasta que el caldo espese y las alubias estén mantecosas. Ajusta de sal y pimienta al final.
10. Deja reposar 10–15 minutos fuera del fuego. Saca y trocea las carnes para servir. Si está muy caldoso, reduce a fuego medio destapado; si queda espeso, añade un poco de agua caliente. Sabe aún mejor al día siguiente.
